Meet the Chef
Milwaukee-native Chef Thomas Schultz grew up believing that a fresh take on Old World fare paired with great wine make for incredible conversation and unforgettable dining experiences. It’s his love for remarkable cuisine and the years he has put into his craft that he brings to Smyth. Schultz creates a menu promising classic yet innovative seasonal cuisine. With a special flair for fish and game, Schultz shares a passion for food reflective of his Midwestern roots.

The Space
With its 300-year-old heart pine posts, Cream City brick walls and original metal fire doors, Smyth's décor features seating at rustic copper-wrapped elm and steel tables, solid oak bar stools and supple leather banquettes. In keeping with the aesthetic of the hotel, Smyth features original artwork and antiques. A series of roosters by Milwaukee artist Andrew DeWeerdt and vintage items adorn the restaurant. From Smyth’s approachable menu to its classic décor, the space instantly feels like home.
